Easter Sunday found us at a friends house for a beautiful potluck dinner. Misty transformed their back deck into a beautiful white escape and we enjoyed the afternoon chatting with friends!
I meant to get a picture before the food was devoured, but alas, I was too busy chatting, so instead I will show you what a hit the food was. Delicious salads, potatoes, ham, asparagus and deviled eggs (that were renamed Resurrection Eggs for the occasion). We brought a salad, the bowl on the left, it has been a staple in our house since I started a modified Paleo diet a couple of weeks ago.
The Cairns Salad- Easter Edition
Strawberries (these are abundant on the central coast lately, it feels like summer)
Blackberries (I had some left from the farmers market)
Pistachios (nut meats only)
The key is, of course, the dressing. I’ve been making big batches of this and leaving it in a mason jar in the fridge to use throughout the week
3/4 cup of balsamic vinegar
3/4 cup of extra virgin olive oil
3 cloves of garlic, minced
1 tsp dried oregano
salt & pepper to taste

Such great conversation, we literally stayed at the table all afternoon.
